Secrets of Egypt & the Nile

Egypt is the oldest table in the world, and it is still set.

We begin and end in Cairo — the call to prayer over rooftops, the Khan el-Khalili at dusk, spice merchants who measure cumin and cardamom by the handful and will tell you exactly which dish each blend is for. The pyramids are there, of course, and they will move you. But so will the bread: baladi pulled hot from a street oven, ta'ameya fried in the doorway of a shop that has been in one family for four generations.

Then the Nile. Sailing between Luxor and Aswan, the river does what rivers do best — it slows everything down. Temple mornings at Karnak and Philae, colossi rising out of the haze, feluccas leaning into the afternoon wind. Between the sites there is tea, there is time, and there is the long green ribbon of farmland that has fed this country for five thousand years.
